Once in a while recipes get forgotten about in the deepest darkest depths of my cookbook, and this is one of them. Until I made it last night I had forgotten how much I liked it. It was meant to have garlic in it, but I had forgotten to buy any, however I have to admit that both hubby and I thought it tasted better without! We had it with egg fried rice. When you marinade the chicken briefly in the lemon juice it helps to tenderise it.
Sticky Citrus Chicken
(Serves 2)
2 chicken fillets, strips
2 tbsp olive oil
juice of 1 lemon
1 large red pepper
2 tbsp dark soy sauce
juice of 1 orange
juice of 1 lime
2 tbsp clear honey
2 tbsp sesame seeds, toasted
black pepper
1) Toss chicken olive oil, lemon juice and black pepper. Add red pepper. Leave while you prepare the other ingredients.
2) Mix soy sauce, with honey, orange & lime juice.
3) Cook chicken mix for 6-8 min.
4) Pour orange/soy mix over chicken. Sprinkle with sesame seeds. Cook on high for 5 min.
After the appalling summer we're only just beginning to harvest the veg. The carrots are only about 5cm long, but they are so tasty. The tomato plant is covered in pea sized tomatoes, but I doubt they will ripen before the frost. The onions, I expect that they are so tiny they will only be suitable for pickling. Oh well....
